If I am in a 2 year fixed term job, where could I apply for a mortgage? (HSBC said no)

Does it mean that you won't have the job after 2 years? I only know of these categories - You are either a company director, a self employed, an employee or unemployed .... which of these categories do you fit in?

I would be an employee, its fixed term for two years subject to funding, its very likely that it will continue to be funded but they can't class it as permanent just in case

Welcome aboard pinkdaisychain,The best is to continue shopping around from bank to building society and if after 3 more unsuccessful responses you may wish to stop telling them that you are on a 2 year contract if that is the stumbling block. After all most people can get sacked at any time these days no matter what the terms of employment are.
