So she has debt, I am helping her pay it. I want to use any 0% transfer options available to reduce the interest we pay and sPeed up the overall debt clearance.

You can arrange for your girlfriends credit card debt to be transferred onto your credit card without the need to add her as a named card holder.
However, as soon as this transfer is completed the debt will become your responsibility not hers.

Some credit card companies will only let you do a balance transfer to cards that are in your name. so if they ask the question is the card in your name you confirm that is correct, they do not check this information.
