Does anyone have a favourite , not too compicated special main course that they prepare as a vegetarian option on Xmas day?

I tend to fall back on having salmon available but I'd like to try a nut roast which is do- able by me? Or something similar for my vegetarian family member. Also does anyone have nice ideas for making up a jug of non alcoholic "mocktails".

Hi instinct, my daughter is a vegetarian so I'm used to this problem. The problem with salmon is that many vegetarians won't eat fish (my daughter won't!) so might be wise to check before splashing out on an expensive bit of salmon.

Nut roasts are the traditional veggie option at Christmas, and the good thing about a nut roast is that it fits in really well with the rest of the traditional Christmas meal. You can buy a nut roast ready prepared from the supermarket, M&S used to do a nice one, and I believe Asda do a ready prepared mix for one. There's some available to order online too...

I think I am going to try some of these vegetarian dishes as they sound lovely. A change from fish, chicken and salmon.

I agree with Fruitcake. Don't rely on salmon, most real veggies won't eat it. I have found that a nut roast (M&S if you don't want to make your own) or even a good spicy stuffing made with apricots, nuts, breadcrumbs, onion and egg alongside all of the Christmas veggies (but don't roast the potatoes in goose fat) and bread sauce, cranberry sauce etc makes a pretty good plate of food that will keep most veggies very happy.
Base your mocktails on cranberry and apple juice with a little cinnamon, some freshly squeezed orange juice and soda water.

Instinct - reading that back on the stuffing recipe, I should have said 'ready-to-eat dried apricots chopped up and added to the mix'. For the spicing I suggest that you use Moroccan-style spices such as cinnamon, ground coriander and cumin and perhaps a little garic.

I missed this thread before Christmas, sorry. My family are veggies and none of us will eat fish, but a quick and easy thing to do is a spoon of cranberry sauce on a big flat mushroom and cover with a quality stuffing and bake for about half an hour. All the flavours of Christmas without much hassle! I find nut roasts a bit dry, and would hate someone to go to the trouble of making me something that I won't enjoy. I do generally offer to take a veggie dish with me if I'm going to a friends for dinner to save the extra cooking.
